An easy meal packed with flavour, perfect for a summer evening. We usually make these into wraps but you could also serve them with jasmine rice, pita break and a Greek salad.

Ingredients
Koftas
1kg lamb/hogget mince
½ cup breadcrumbs (optional)
4-5 cloves garlic, minced
1 tbsp cumin
1 tbsp cinnamon
1 tbsp coriander (ground or fresh chopped)
1-2 tsp salt (to taste)
½ tsp cayenne pepper (to taste)
Pre-soaked bamboo skewers (optional)
Sauce
1 cup yoghurt
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped fresh mint
1 tsp cumin
Salad
Pre-made coleslaw mix or make from scratch using:
½ a small green cabbage, sliced
½ a small purple cabbage, sliced
2 large carrots, peeled and grated
1 tbsp lemon juice
Chopped fresh mint and/or coriander to garnish
Tortilla Wraps
We usually make our own using this recipe, otherwise use store bought ones to save time
Preparation
Combine all kofta ingredients in a large bowl. Optional: refrigerate for half an hour or overnight to bring out the flavours.
Make the sauce by combining all sauce ingredients in a small bowl. Refrigerate until time to serve.
Prepare the salad by combining all salad ingredients in a large bowl. Refrigerate until time to serve.
If you're making the wraps from scratch, do this now.
Form the mince into approximately 80-100g portions and shape into logs. Optionally, you can form them around pre-soaked skewers. At this point you can freeze extras for easy mid-week meals.
Cook over high heat for 5-6 minutes until browned and cooked through. We usually use a cast iron skillet but you could also BBQ. You shouldn't need to use any oil as a fair bit of fat will cook out – this is normal for lamb mince.
