Fresh, healthy and delicious, these wraps are quick to make and a great way to use up leftover pulled lamb. The yoghurt sauce and salad change up the flavour profile, turning the original pulled lamb recipe into completely different dish.

Ingredients

Make ahead

  • 4 servings of leftover Pulled Lamb - recipe here


Sauce

  • 1 cup yoghurt

  • 1 tbsp lemon juice

  • 1 tsp fresh mint, chopped

  • 1 tsp fresh coriander, chopped

  • 1 clove garlic, minced


To serve

  • Wraps – we usually make our own using this recipe, otherwise use store bought ones to save time

  • Mixed leaves

  • Tomato, sliced

  • Cucumber, sliced

Preparation

  1. Combine sauce ingredients in a bowl

  2. Assemble wraps to taste
