Fresh, healthy and delicious, these wraps are quick to make and a great way to use up leftover pulled lamb. The yoghurt sauce and salad change up the flavour profile, turning the original pulled lamb recipe into completely different dish.

Ingredients

4 servings of leftover Pulled Lamb - recipe here
Sauce
1 cup yoghurt
1 tbsp lemon juice
1 tsp fresh mint, chopped
1 tsp fresh coriander, chopped
1 clove garlic, minced
To serve
Wraps – we usually make our own using this recipe, otherwise use store bought ones to save time
Mixed leaves
Tomato, sliced
Cucumber, sliced
Preparation
Combine sauce ingredients in a bowl
Assemble wraps to taste
